House White2...this is the same batch as the House White, except this sat for a week on American Oak. It started as a 2 gallon batch, was split after primary fermentation.

This was in primary for two weeks: started on 26 / 03 / 2015 and racked to secondary on 02 / 04 / 2015. Blossom honey, Harrogate spring water, K1-1116 "Montpellier" white wine yeast, handful of raisins in primary and heaped teaspoon of Youngs yeast nutrient in secondary. Bubbling away nicely.

If it's been over 6 months and still hasn't cleared, try throwing half a dose of bentonite at it and waiting a few more weeks. It should drop fully clear with a little help.

Its only 2 months and the other ones that are just a little older, we bottled a few days before this and they cleared up in a couple of days after bottling. I'm not too worried. We've got 4 more months to go before the wedding. They should be fine, but if not we will def try the bentonite.

Second racking of the Baltic honey mead. Drank the sample batch. Hopefully age will improve it, even though I used a young wine yeast.

Just racked another mead off its lees.

Raw wildflower honey, using Vigo Cider Yeast.
