My wife just made a raspberry/pear wine yesterday from Vinters. She doesnt remember seeing anything about degassing on the instructions.

Do you have to degass every wine and when do you do it?
 
Not usually, the gases escape through the air lock. unless you add a lot of chemicals, degassing should not be needed. Follow the instructions and rack as needed; generally 30 days or 1/4 inch or more of sediment in the bottom of the carboy. Be sure to keep the head space to a minimum and top up if needed. Cheers:)
 
You MUST degass kit wines as they don't sit long enough for the gas to come out on its own.

4 to 6 weeks total time before bottling isn't enough time, a year would be.
