getting ready to try my first Oktoberfest, please let me know what you think.

Steep
0.25 lb Munich Malt
0.15 lb Crystal Malt
0.35 Vienna Malt
0.25 Cara Munich

1 oz 8.9% norther brewer 60 min
1 oz 3.2% Spalt 10 min
(could be high on the AAU's?, so i can cut it down some)


Wyeast Marzen

not sure about the hops, i have a few other types on hand, but not sure if they'll "fit". other hops i have, Cascade, Styrian Goldings, Sorachi Ace, Columbus, Spalt, Galena, Czech Sadek.

i know some of those wouldnt go with this style...but let me know.
 
1) I'm not a fan of crystal malt in the style. 2) Yes, the hop bitterness might be a little high. 3) I think you forgot something as the recipe only shows a total of 1 lb of malts.
 
Munich and Vienna need to be mashed like base malt. You will get little flavour and alot of starch if you just steep them. What is your primary fermentable going to be? Pilsner malt extract?

OK, that's better. Using that extract as your base, get rid of the crystal and cara malts and just use two pounds of Vienna in a PM. Then cut your bittering hop addition almost in half and you're there. :mug:
