Avoiding change to funk from fruit?

Aside from filtering, is there any way to keep the fruity flavors from a primary brett batch and avoid it turning into the funky flavors? Would campden tabs work?

Nothing against the funky flavors, I just prefer to know that they're going to be there and in some cases would like to keep the fruit attributes.
 
I would say that lowering the temp will stop the activity.
