I have some left over Sorachi Ace and Motueka (2.5 oz each). I wanted to use them in a brew. I was thinking something along the lines of a simple pale ale and need some advice for the hop bill/schedule.

This will be my 5th overall batch. I do partial boils with extract and speciality grains. Here is what I have so far:

6# Pilsen Light DME (half late addition)
4 oz 60L crystal

.5 oz Sorachi Ace(15.1%) 60min
.25 oz Motueka (6.7%) 30 min
.25 oz Motueka (6.7%) 15 min
.25 oz Motueka (6.7%) 5 min

Yeast: Probably a dry yeast like US-05.

This is my first recipe so any suggestions are appreciated. Thanks in advance.

4 oz of Crystal 60L seems a bit light to me. Bump it to 12oz. 4 oz of honey malt would give it a nice sweetness too.

Hop schedule looks fine to me. You should end up with a nice lemon/lime pale.

Good luck!

Thanks for the input. I was thinking that 4 oz of crystal might be low. I will up the amount and check the LHBS for any honey malt.
