SS nut in an aluminum pot - is this a no-no?

I don't see why it would be a problem. Also, you can get aluminum nuts at Mcmaster.

in a corrosive environment and with long term exposure the aluminum will become sacrificial.
beer isn't that corrosive and our exposure times are very very short.
No problem at all.
 
Aluminum and mild steel would be bad, but we are talking short exposure time. I'd dismantle the pot after each brew, clean and dry all parts, then reassemble.
