I am looking to make dark india style ale, a hoppy dark beer, that uses summit hops exclusively. I don't want to do anything to overpowering or crazy, but I want a nicely balanced brew here. Here is what I was thinking:

13.00 lb Pale Malt (2 Row) UK (3.0 SRM) Grain 89.66 %
1.00 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 6.90 %
0.50 lb Chocolate Malt (350.0 SRM) Grain 3.45 %
1.00 oz Summit [18.00 %] (Dry Hop 10 days) Hops -
0.50 oz Summit [18.00 %] (60 min) Hops 25.9 IBU
0.50 oz Summit [18.00 %] (30 min) Hops 19.9 IBU
0.50 oz Summit [18.00 %] (10 min) Hops 9.4 IBU
0.50 oz Summit [18.00 %] (5 min) Hops 5.2 IBU
1.00 tsp Irish Moss (Boil 10.0 min) Misc
1 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

Beer Profile

Est Original Gravity: 1.070 SG
Est Final Gravity: 1.018 FG
Estimated Alcohol by Vol: 6.81 %
Bitterness: 60.4 IBU Calories:
Est Color: 21.8 SRM

I usually first wort hop but I decided against it for this recipe. Sometimes I think for an IPA style recipe the sharper bitternest of a 60 minute addition is spot on for the style.

Any suggestions or improvement I can make. I am still a little green as this is only my 12th batch of beer....I tend to use specialty grains heavily, usually in 1 pound increments.

I'd go with darker crystal and cut the chocolate to 2-4 oz. Maybe even drop it. Might be too much roastiness for an IPA. Dehusked Carafa would be a better choice if you want to use it. I've used Cararoma and Special B in an IPA with good results.

I changed it to 4 oz black patent.....will that be subtle enough? I don't know if that will make it black enough though. I suppose dark copper would be fine too.

I am just looking to brew something different. I was also thinking about using the same hop schedule on a beer that is about 25% amber wheat malt.

Add the BP or Chocolate just before sparge and it should give you plenty of color. I still say use some darker Crystal but YMMV. The 30 min hop addition doesn't do much. Might want to go with .75 oz at 60, 10 & 5 along with the DH. I think S-04 or S-05 would work with this!

Maybe go with all first wort and 15 minute or less hop additions?
