Left Overs Wit?

I have some left overs that I'd like to use up but I don't have experience formulating my own recipe (and actually knowing what to expect). Can you offer some ideas for a brew as well as incite to where I should start in recipe formulation. (I have lots of books but haven't put it all together yet.)

Ingredients on hand:
4 #'s Laanglander Extra Light DME
1# Laanglander Light DME
1# Muntons Plain Light DME
5 #'s Corn Sugar

(2) 1oz Packs of Saaz Pellet Hops

Wheat Liquid Yeast
(2) Ale Dry Yeast left over from kits

if you want a wit, go get some wheat DME, orange peel and corriander seed (about an oz of each) and through the wheat in with the other DME to the OG that you want and there's a basic wit.
 
First, I would not use the Corn Sugar...put it aside and use it later for priming

Get some specialty grains for steeping...maybe some vienna or crystal

Get a new ale yeast - save the wheat yeast for a brew with wheat in it

You can use all 6 lbs of DME for your brew

Maybe throw one ounce of saaz in at the beginning of your 60 minute boil and one near the end

keep your fermentation below 70 F if possible, definitely below 75

do some investigating and put up some ideas...you'll get plenty of feedback on these boards
