I had a neighbor give me four and a half gallons of fresh pressed juice/cider. I strained it through cheese cloth to get the pulp out. I used white labs WLP775 yeast and about a tablespoon of yeast energizer, as per the guy at the LHBS. After four hours, it is already bubbling pretty steady.
