Ive stored a starter for 2 weeks pitched without any issue. I cant comment on lag time as i wasnt around for the fermentation. It over attenuated but thats because it was summer with temps 80+ im sure

This is not best practice, but I left a 2l starter in my refrigerator covered for more than 4 weeks. I decanted to 600ml stirred it up and pitched into 45 degree wort (I know, but it was cold out) - four days later in a room at 68 degrees I have fermenting wort, six days the wort is fermenting strongly.

By the way I made the starter from 6 month old yeast (white labs).
