following Joes acient mead reciep i've added some pear to it also :)
Tiny bit more cloves and spice
And some orange juice. (Because it tasted to much like lem-sip cough medicine!)

Will see what it comes out like :)
 
If you deviate from Joe's recipe, it "voids the warranty",

i.e. doesn't come out good usually, using different fruit (lemons not too bad).

Wine yeast usually takes it dry, so as the one mentioned in the recipe is a US brand, Allinsons does the trick. It's not very nice as a dry mead.

Too much clove, as is mentioned in the recipe, makes it vile. Less is more with the spices.

Don't worry about the Orange pith. Yes, normally it wouldn't be used, but with JAO it seems that it balances residual sweetness nicely.

Just stick to the recipe "as is".
