Apfelwein Help

So I decided to take a stab at EdWort's Apfelwein for my second "brew"... I went to me local brew shop to pick up the yeast. I don't know much about any of this so I asked for the yeast in the recipe... He didn't have it and he handed me Lalvin Wine Yeast Souche ICY D 47. His said this will work... What are your thoughts? Don't want to ruin the batch...

d47 is a good white wine yeast. should be OK. if you have yeast nutrient it wouldn't hurt to use some in case the D47 wants more than apple juice can supply.

Will it cause krausen? I was planning on putting this in my 5 Gallon glass carboy...

D47 is my favorite juice yeast.

No krausen, fill to 2 inches below airlock.
