How Much Yeast for a 2.5Gal Batch?

From my understanding yeast, once pitched into a tasty wort, multiplies like rabbits at a rave. So is the original "starter" quantity as important as other recipe quantities?

I was thinking that when I modify the ubiquitous 5gal recipe down to 2.5 gallons that I wouldn't have to modify the yeast. Correct? One packet is good enough for apfelwein, 2.5 or 5 or 6 gallon batches all the same yes?

OK OK - seriously - You can probably pitch too much at some point but that would be 3 or 4 packets probably. You CAN pitch too little so I think one normal packet of whatever you are using would actually be about perfect for 2.5 gallons.
