Mashing with odd grains

I've never tried this but I've always wondered if anyone has tried brewing with rare grains like quinoa, bulgar, wheat germ, polenta, millet etc. I've got alot of these odd grains in my cupboard and have always wondered "what if?"
 
Just cook them before mashing with any base barley. Bulgar is just parched wheat, wheat germ is the fatty portion of the wheat grain, polenta is corn. I have an odd recipe that uses millet and swamp water. Have not tried it.
 
you'll either have to add barley (6-row would be best) or some other grain with enzymes. or you could just add enzymes. and yeah, you have to boil it first...do a "cereal mash."
