Do carbon water filters filter out necessary minerals for brewing?

I have been using a GE carbon filter to filter out chlorine from my tap water. Around the same time I have been noticing my brews coming out with a light body and very little head retention. Can this be related? Thanks
 
If its Chlorine you want to remove -

Instead try 1/2 a Campden tablet. $3 for a bag of 100, means a cost of 1.5 cents for 10 gallons of water de-chlorinated
