Ah, now I can finally breathe a long-needed sigh of relief. The ongoing saga of my two wheat beers (hefe & wit) that never carbonated is finally over, with excellent results.
So, yeah, the whole time, it was just the stupid laaglander I used to prime with. I implore all of you who bottle (or anyone who uses extract in general for anything): don't use laaglander, unless you're looking for unfermentable sugar by the truckload.
So, I uncapped all my hefe and wit bottles last weekend, dropped in munton's carb tabs (the muntons are the best, because you can regulate the amount you use---4 for 12oz, 6 for 22oz, 9 for 750mL), and recapped. I just finished my first Steffieweizen from this batch that was actually carbonated. Hell yeah. And it tastes excellent.
