Are stainless fittings necessary for HLT?

I picked up an older 5-gal Igloo beverage cooler from my parents' house, that was just sitting in their basement taking up space. My plans are to convert it to a HLT for fly sparging. Do I need to use the more expensive stainless parts, or are brass/plastic parts from Lowe's/HomeDepot sufficient?
Also, What kind of hose should I use for that?
 
If you can find "LFA" parts. (Ie LFA-86 instead of A-86), those are lead free brass parts and would be even safer than the normal A parts (which I still think are fine)

OK I'll look for the LFA, I really would like to have 0 lead.
