WLP029 Kolsch yeast
 
I tend not to mess too much with the classics. I like using just pilsner with a little bit of Munich, some German noble hops, and the yeast you're using.

Any reason you're adding the spices and oranges? That recipe with almost give you a wit/kolsch taste.

Thats kind of what I was going for.. I'm not a huge fan of belgian wit yeast, and thought i might get some more interesting flavors from the kolsch yeast over us-05. I know its not true to the guidelines but should make an interesting beer. I was also thinking of adding some flaked oat too.

If that's what you were hoping to achieve, I think you're spot on. Should be a very interesting beer, and pretty damn drinkable.
 
I like seeing people push the envelope. The "kolsch" in the thread title made me think of the classic ale. Post a follow up to how this came out.
 
5 days in the fermenter gravity seems stuck around 1.015 taste pretty good, a little heavy on the orange but should mellow during lagering. Does anyone have experience with this strain? Is it a slow finisher?
