I brewed my first stout two weeks ago. I knew it was going to be big but I didn't fully realize just how big it was. Here's the grain bill.

16lb Briess 2-Row Brewer's Malt
2lb Briess Flaked Oats
1lb Crisp Chocolate Malt
8oz Briess 2 Row Carapils
8oz Briess 2 Row Caramel 20
4 oz Briess Roasted Barley
4oz Crisp Black Malt

It has been happily fermenting for the past two weeks. I made a half gallon starter with White Labs English Ale yeast. I haven't checked the gravity yet, I will most likely give it another week before check.

Big question is...........how long am I going to be aging this beer? I was hoping to keg it the first of March but that isn't going to happen. So what do you think?

I'm brewing an IPA this week to keep me from messing with my stout.

i made a similar stout on the 8th of jan that i pitched onto yeast cake. OG was 1.095 and after two weeks it had gone down to 1.010 so i racked to a secondary. i plan on leaving it there for AT LEAST another two months. i think 3 months is a good amount of aging before racking it to the keg.
