Someone gave me a couple bottles of sherry and I do not like it. (I think they heard me say I like Shiraz:)) can I use it somehow in my wine making?

Use it to top up your carboys.
 
Definitely don't dump good sherry. Re-gift, blend, fortify, or just cook with it. Even if you don't like sherry try using it while making caramelized onions or even better, pour some of it over red skin/fingerling potatoes with some salt, pepper, fresh rosemary, and olive oil, then bake. Also can be used in marinades, pickling brine etc. I use a portion of sherry in my jerky marinade and it adds a special something to it.
