Want: Goose Island Reserve Matilda Clone

Hi Everyone,


I'm just finishing setting up the final touches of my AG setup, and I want to make a clone of one of my favorite beers.

Goose Island Reserve Matilda (its a belgian pale ale)


I've got a couple of bottles sitting around, so I'm going to try to pull the yeast from one of them.


Goose Island's page just says 2-row and Caramel malt, but theres got to be more than that in there. Anyone got any ideas, or a recipe they think might be close?

I would love to see one of these also. I love this beer. Matilda and BCS are two of my favorite.

As an update, I tried to culture yeast from the bottle, and I'm now pretty sure its filtered.

I know that the authors of Beer Captured have a new book, called Beer Kits (I think), with a clone recipe for Matilda but I don't think it has been released yet.
