The wrong hop brew

I went to the LHBS tonight and milled up all the grain I needed for Friday's brew. It was going to be a Two hearted Ale clone but when I walked into the hop room I was like :( They had less then half the hops they had two months ago when I was in there last.
And what do you know, NO Centennial hops, no pellets and no leafs.
So I dropped the clone and whent with this.

It's basicly the same brew but with Amarillo instead of the Centennial hops.
 
If he was going for a Two-Hearted clone with Centennials, I'd say he does. Or would at least find the substitution acceptable.

Centennial has a very distinctive citrusy character, at least in my limited experience. I can't imagine that Amarillo would be any more grapefruity or citrusy. There's only one way to find out.

Let us know how it turns out. Sounds like an interesting experiment.

I'd say you are lucky they had that much Amarillo. Sounds like a good beer, I really like one hop beers.
 
They had a lot of those hops. I think I may run back there tonight and get some more. I think the homebrewers around here just don't get into the "different" hops.

But I think I have had a IPA that was all Amarillo. There is a very small brewpub here that's called "The Hidout" and they have an IPA that I think is even better then the Two hearted. I asked thru email for the recipe but they never gave it to me. I did talk to the wife (co owner) of the brewer and she told me that she thinks it's all Amarillo.

I will let you know how it turns out in about two months. Maybe if we have another brew swop I'll jump in it with this one and a few others. :tank:
 
Well I brewed it up today. Man did all those hops smell good. :drunk:

I was shooting for an OG of 1.060 at 11 gallons but ended up at 1.070 at 12 gallons. That's a 89.9% efficiency :rockin:

The brew is sitting in my back bathroom right now at 70* and I will take it down to my fermenting room in the morning where it will sit at 63* for 10 days then another 14 days dry hopped.
 
agh no, Amarillo is grapefruit-y too? better or worse grapefruit-y than Cascade?

i just bought a pound of Amarillo, oi vey! that's ok, we have a IPA competition coming in May. :D

It's A LOT more then Cascade.
 
we just had a brewfest here last week and Bell's was pouring the two hearted. Loved it. So I asked the guy if he knew specifics on the recipe... he couldn't tell me anything other than "all centennial" Duh.

Anyhow.. here is what I cam up with, and brewed it yesterday.

Basicly yours was what I was going for. But you use a little darker 60L where I used the 40L and I had less 2-row (I get 85-90% effic and I NEED to change the setting in Beersmith) and I used some Vienna

But my LHBS was all out ot the Centennials and I had to go with this instead.

One thing you are really right on is that it smells freaking GREAT..

I'm sure youre is going to turn out very good. Let us know how it is. :mug:
 
Yea, I really need to work on my efficiency. This is my third AG. I have been using a corona mill, and have been dialing it in slowly. I am very afraid of a stuck sparge, though I think I can go a bit finer yet without crushing the hulls and turning the grain to flour. Can't wait to get back into the brewery... um... garage.

I have been using a corona mill at my LHBS and it works well.
