I want to brew this Friday morning the orange and coriander beer. Probably a cross between lcasanova's recipe, spaced's recipe and my own additions. I have all of the ingredients...except yeast. But I do have about 8 packets of KIV-1116 for mead/cider.

Any idea if that will be okay? I don't want another bad brew day!

I wouldn't do it... Not even a consideration. If you can't get to a LHBS to get beer yeast, order some online with overnight shipping so you have it on Friday.

I'd see if you can get some T-58 from your LHBS or order it online.

There's enough going on with a gluten-free beer, I wouldn't want to toss in the added variable of a non-beer yeast.
