Hello everyone, this is my 2nd AG attempt. This time I am trying something that I think is rather unusual, an Imperial Honey Ale.

This beer is modeled after Imperial or Double IPA’s (India Pale Ales). I am looking to achieve a flavor similar to that of beers by Dogfish and Lagunitas; they were my inspiration for this beverage. However, seeing how I am a fan of Honey and using it as a fermentable, this recipe will contain Honey. I am not calling this a Braggot, because it will contain Hops and is first and foremost, a beer. I am using BJCP style 14-C, Imperial Pale Ale, as a guideline. My goal is to create a beer that would technically be an IPA, but feature Honey as well. This is an All Grain recipe…

• 2 Row Pale Malt 10 lbs
• Alfalfa Honey 3 lbs
• Cara Pils Malt 1 lb
• Crystal 60 1 lb

• Chinook 13% 2 Oz 60 mins
• Amarillo Gold 10% .5 Oz 45 mins (consider not using)
• Amarillo Gold 10% .5 Oz 15 mins (considering 5 mins)

• Yeast will be WYeast 1099 – Whitbread Ale

Using ProMash, this configuration would result in a wort that is:

S.G. - 1.089
Plato - 21.43
IBU - 119
SRM - 10

The BJCP style says an Imperial IPA should have no more than 100 IBU’s, thus my alternative boil periods. The alternate boil times and quantities will result in an IBU rating of 100 exactly.

I am planning on a 4.5 gallon mash, which will be approximately 1.5 Qts / lb. I will use a strike temp of 175° which should result in a mash temp of 160° - 165° F. I will mash for 60 mins and then use a batch sparge. I plan to re-circulate the first half Gallon of liquid through the grain, then use one additional Gallon of water heated to 155° F.

From here, I will bring to a boil and add the first round of hops. This will be the 2 ounces of Chinook for 60 minutes. Next will be one half ounce of Amarillo at the 30 minute mark. I will conclude with the other half ounce of Amarillo for a bit more flavor and aroma, with 15 minutes remaining.

Update

Brewed this Sunday and my batch came out dead on to the recipe. Using ProMash, I hit 77% efficiency and ended up with an O.G. of 1.091, a hair over my estimate. I used a bit of cold, store packaged drinking water to speed up cooling and I brought my O.G. to 1.086, I can deal lol Here was the final outcome:

Update

Gravity now at 1.025 = 8% ABV. Flavor is sweet and hoppy, with a terrific aroma and smooth finish. It is rather cloudy yet and I am sure it will take another week or two in a secondary to clarify.

I would like to know too... specifically if the amount of crystal malt was superfluous (*$100 word right there*) given that amount of honey?

Was the beer too sweet?

And someone post any pics of Marisa Tomei.
