What is your lambic brewing process.

Do you pitch ale yeast and then brett in the secondary?
Do You add oak in the primary or secondary, or at all?
How and when do you add fruit.
Do you rack to secondary or age in the primary.

I'm curious to see what others do.
 
Pitch everything at once. No oak. Add fruit after a year as you would in any other beer. Age it all in the primary.

That said, you can do it differently. I'm sure there are people who pitch at different stages, add oak, add fruit at different times and/or rack to secondary and make good lambic. The common practice changes for different types of sours.

I pitch Wyeast Lambic Blend (one pack per 10 gallons), ferment in a 10 gallon plastic container, pitch dregs, then transfer to two 5 gallon glass carboys.

No sir.
How and when do you add fruit.
Only if it doesn't turn out how I want it to, so I haven't added fruit yet.
Do you rack to secondary or age in the primary.
Rack to secondary after one month. Glass for 12-36 months.

I've used Wyeast 3278 only for my lambics.

None.

I usually let my lambics ferment for about a month w/o the fruit, then add whole fruit and let it sit on the fruit for at least a year. Then rack to secondary.

Do you rack to secondary or age in the primary.
Yes, I rack to secondary and let age in secondary for about another year.

I'm curious to see what others do.

Making one soon? If so, be ready to wait at least 2 years for a good one.
 
not lambic to style but all my funky beers get all the bugs at once oak if i want that character fruit 8-9 months only rack if i am adding fruit
