6 lbs of base malt won't be enough, will it? Otherwise, you've got it covered.

Got that covered it will be about 24 IBUs when Im done,

1 oz Hallertau Bittering
.5 oz Saaz Flavor
1 oz Cascade Aroma

Wyeast Trappist

Yeah I would shoot for at least 50% of the pale malt in the grist.

Consider using noble hops throughout. It will be more traditional. Here are they are: Saaz, Hallertauer, Hallertauer Mittelfrüh, Tettnanger, Styrian Goldings, Spalt, Perle, and Hersbrucker.

A good combo close to what you have described would be:
Hallertauer-Kettle addtion
Tettnanger-Middle addtion
Saaz- Late addition/end of boil

That sounds great! I will try that thanks

Also as you can see I don't have very much fermentable malt - what would happen if I added say 6 # Briess Light LME? Would have a profound affect? I know I would require more yeast but that is what starters are for, no? Short on time and anxious to get brewing. One of my Carboys is empty - that is a law breaker!!

Hey Wilson,
Is that one pound of dark candi syrup or one bottle? One bottle is 1.5 pounds, for the record...

If you are using a whole bottle with all the malts listed and 75% efficiency you should get an OG of about 1.072 which is great for a Dubbel... if only one lb then it will be around 1.069... still ok for a Dubbel (OG range of 1.062 - 1.075 BJCP standard)

If you throw in 6# of LME then you are in the Belgian Dark Strong range... also a great place to be!!!
