I have a partigyle coming up, but I only have one brew pot big enough to do hold a full boil's worth of wort. As long as I mash out, I assume I can just leave my second runnings in the mash tun while I boil, chill, and transfer the first beer?

I did this with my first all grain batch on the 1 st...i just waited until the 1 st runnings came to a boil before heating the 2nd runnings strike water..it seems like every thing came out ok.. tasted ok when i racked it..

I always lauter into buckets first. I started this to compensate for a smallish pot, but now I use it as a grant. You could just hold on to the buckets until your first boil is done.
