When to pick

Ok, I have some TG's (tennessee goldings) that are ready to be picked.. at least some of them.. there are some cones that just came out @ the end of the bines, and are a few weeks from harvest.. So can I just pick the ones that are ready and leave the rest to bloom?

Multiple harvests are common. Go for it!
