Gentlemen,

I am 'brewing me up' 5 gallons of 'Mein acht pfund Hammerbier,
w 'Octoberfest' speciality grains 'steeped in',
today, I wanted to pass along an idea which I think is important.
In my: 'former kitchen brewery',
hanging on the window curtain by a piece of bailing wire,
is what I have taken to calling:

'The Great Brain'.

Just a list,
but it is 8 1/2" x 14"
and has essentally everything, I need to remember
during each of three steps to:
Brewing, Reracking, or Bottling,
'mein Beir'.

I just walk up to my kitchen window,
ie. the 'Brain' and say:

"Oh...! Great...! Brain...!"

"What have I forgotten?"

And its all right there.
If I am 'brewing' I read the list, #1. Brewing...
and if everything is properly idophored and ready
I feel good because I know I have not forgotten anything,
but that almost never happens.
The Brain saves me time and time again.
Boys get yourselves a brain and hang it over the sink too!
{Mine never leaves that place.}
Now, I will rewrite it and hang it up on the wall
in the 'former pantry brewery' till next year.
{ie. November}
It would get 'tore up' hanging there all summer.
But next brew season the 'Brain' will be on the job!
Hanging there making 'mein Hammerbier' better.

1. Brewing.

Funnel,
Primary '7.5 gallon in milk crate'
6 gallons of store bought 'wasser'.
shaking cork with no hole.
yeast
hops
bottling bucket to sanitize funnel!
big overflow hose, 'if using S-04 yeast',
{but not if using safale 56 as it doesn't overflow.}
Do not fill primarys unless they are in milk crate!


2. Reracking

1 gallon of {sanitized}water
5 gallon secondary
reracking cane
reracking hose
cork and anti-siphon valve
{I can sanitize the canes in a piece of 1 1/4" pvc with a cap on the end.}
clean out all tubing and hoses with long wire brush.
rinse well
sanitize hands 2-3 minutes too!



3. Bottling

Boil priming sugar first so it can be cooling.
wash bottles, in 'just' hot water.
brush bottles with bottle brush
idophor bottles.
Take valve off bottling bucket and idophor it,
reassemble.
Sanitize bottling bucket,
bottle tree, ect
stir spoon,
siphon hose {sanitized and brushed first!}
siphon cane { " }
bottling wand { " }
bottling bucket,
priming sugar,
caps,
3 gallons der wasser,
sanitize hands 2 3 minutes
Don't forget to pour priming sugar in bottling bucket you idiot!!!
never fill Primary unless it is already in a milk crate!
