I woke up this morning and my fermentation room was at 56 F.

I have a batch of german Hef going on day 11..

with WLP300 Hefeweizen Ale Yeast.

I hope I'm not screwed...

Thoughts?

If it had been day 2, and it dropped to 50 for several hours, you may get a stuck fermentation, but a shake and warming back up typically fixes that. At day 11 some temperature fluctuation will not hurt the beer.

You are good to go!

Yeah, I agree with Whiskey, you're well into the primary to be too concern with it being stuck. However, since you didn't take an OG you can't be too sure, but hefes tend to be more forgiving than others. Brew on!!!

I think with my hefes the banana tones down a little with cooler temps at the end; although I use wyeast3056. Don't know if that makes a dif. Usually it only takes 8 or 9 days in the prime.
