I'm in the process of making a banana wine. I had it in the secondary for about a month then racked it into another carboy leaving behind a decent amount of lees. It's been nearly another month and it's still very cloudy and no lees have been accumulating. I did use pectic enzyme 24 hrs prior to the primary. Does anybody have any thoughts on using an additional clarifier to help move it along? I've got some bentonite and gelatin. I know I should probably just be patient, but will adding either of those at this stage jeopardize the outcome of it?
