I am sitting on a pound of cascades, so I am thinking pale ale. My last pale ale was good, it used 10# marris otter and 1# crystal 60 for base malts. I mashed at 150 and us-05 took it down to 1.008. The beer is good, but there is not much body or malti/caramel flavor to speak of. I think I mashed too low, but oh well. So now I am trying to work off of my previous experience to create a well balanced APA, that is a little copper/orange colored and has a nice malt backbone and a little "mouthfeel" or body. Please help.

Beer Profile

Est Original Gravity: 1.053
Est Final Gravity: 1.012
Estimated Alcohol by Vol: 5.09 %
Bitterness: 34.5 IBU
Est Color: 9.3 SRM

Mash Profile

154 degrees for 60 minutes

My opinion:
Cut back on the victory to at most 0.5 lbs (i would use 0.25 lbs) and up the crystal to 1lb of no more than a 60L. The mash temp of 154 will help keep the final gravity a bit higher. Either way it will be a good beer.

If you want a maltier pale ale, you could take a look at my House pale ale, and see how it's similar to what you're thinking. I made it for my husband, who likes hops (particularly cascade) but almost likes a malty beer.

I appreciate all of the input, I think that is the secret of a good pale ale, a balance between malt and hops, not to thin not to full bodied.....

Is victory considered a crystal malt or is it less likely to leave me with unfermentables in the wort?

Yooper, this almost seems like a lighter colored octoberfest lager type of grain bill...just a little lighter....is it sweet?
