If I were to do a single (or 2 step) infusion mash for a Dunkel, will it come out good (without having a decoction mashed Dunkel beside it to compare)? Also, what's the difference between a Dunkel and a Bock. Being both dark German beers, what else are the differences. Thanks for you help.

i use a single infusion mash for my dunkel. It turned out great but the intense maltiness starts to fade after 6 mos. Next time i brew it im going to do a decoction but it deffinitly works. Both are lagers but a bock is higher alcohol and more malty. Check BJCP website
