I've got one of these sitting around and wanted to us it to cool my coffin in my keezer. It's got three wires, red black and yellow. From what I was reading I guess the yellow wire is for a tachometer. I've got a 12V transformer to power the fan, can I just leave the yellow wire not connected to anything since I don't really need to adjust or know the RPMs?

Yes leave the tach wire disconnected. You might want to double check which one is the tach wire. In computers the black is ground, red is 5v, yellow is 12v, so if its a 12v fan it may be running off the black and yellow wires and the red could be the tach.
