I brewed an Oatmeal Porter this past weekend. It called for 8oz of Black Patent & 4oz 120L Crystal and steep for 30 min and the addition of 5.5lbs of DME. For some reason unknown to myself, I decided to steep 16oz of 120L Crystal with the 8oz of BP. I'm just wondering what the outcome might be? Is there an advantage or disadvantage to using that much more?
 
It'll be sweeter, probably won't attenuate as well, probably a little thicker, it'll have some other flavors, maybe of dark fruits and dark caramel. Neither good nor bad, just different. It might be a little too sweet, you'll have to see; it'll probably be good. It's still beer!
 
Not to mention that you'll probably up the SRM a bit, not that you could really tell any way. :)
