Can I make my starter in 2 phases?...meaning I want to cook down the DME today, cool it, put in flask, cover with foil, then put it away for a day or two.
THEN oxygenate and pitch the yeast.

I want to pitch on Saturday or Sunday, but I'd like to cook down today because the wife complains about the stinky DME odor.

Thought about this myself. My reservations about doing this is it's not a sterile enviroment and that couple days might allow something else to take hold.

I prefer to just make a starter a few days ahead of time. The yeast usually drops out by the time brew day comes and I'll just pitch the slurry.
