I am not a noobie but I've got a noobie question. I've always used pectin enzyme but I am presently out. The mill called me and told me that they are going to do their last pressing tomorrow. I let my cider sit for a year and I was wondering if it will still clear as it does with the pectin enzyme? I'm assuming it will but just wanted some confirmation. Thanks
 
It should, but if not, you could always add pectic enzyme later on, too. It doesn't work as well in the presence of sulfites, or after fermentation has started, but it still will work pretty well.

You could also try other "after fermentation" clarifiers if it's not clear in a year- like sparkelloid or chitosan.
