Vinegar flavor, does it go away?

I rubbed my cheddar with vinegar to keep down mold but now that I broke it open to eat it there is a mild vinegar flavor. can I get rid of this flavor?
 
How about a different liquid to cover it. It is ruined now so if you have an experimental suggestion I will try it. (I also dried it to long, it is very dry.)
 
I was taught to wrap cheese in a paper towel just damp with vinegar. Never put it directly on the cheese.
