I've got a recipe that calls for 6# of wheat LME and 1.5# DME Can I just substitute the 6# LME for 4.8 #DME for a total of 6.3#DME and no LME?

I forget what the exact conversion rate is, but that sounds about right. I think with DME you use 15-20% less than LME to get the same OG. The reason some recipes have 6# of liquid extract and a pound or two of dry is because of the way LME is packaged. Usually in cans that contain 3.3# which if you just simply used 2 cans it would be close enough for a recipe that called for 6 pounds or in half gallon jugs that hold 6 pounds. Once the seal is broken, the extract basically needs to be used right away, but with DME no matter how it is packaged you can measure out what you need and simply store the rest.
