I'm planning to make a stout and so I bought some roast barley at the weekend.
I will probably have some left over -- could I safely use a small amount roast barley in a "dark lager" recipe, just for coloring mainly.

You probably could as long as it wasn't a lot. I did a black lager using chocolat and black patent grains. I just used roasted barley in an amber and it didn't darken it much but I think it adds a little bite.

yeah, you can use the dark grains for coloring only. just use an ounce or two of it to get the color and not pick up much flavor.

My Schwarzbier recipe uses 4 oz. in a 30 minute steep (along with other grains) at 150°F for a 5 gallon batch.
