brewed a wheat beer with 6.6 lbs of breiss wheat extract and nothing else. Sg was 1.056 (kinda high) and will bottle tonight. This morning's reading was 1.012. About 5.9% ABV. 4 days in primary, and 14 days in secondary. Boil vol. = 2.25 gal. Total vol for pitching was 4.5 gal. Used White Labs P320 Amer. Hef. Any explanations on the high gravity reading? Was shooting for about 4.5% - 5% Thanks for the input.
 
BeerSmith says 6.6 lbs of wheat extract into 4.5 gals = 1.053, so you're only .003 off, which isn't much. Maybe you had just under 4.5 gals?
 
your OG shoulda been around 1.053 @4.5gals, sounds like it just wasn't mixed well enough when you took the reading. wort and water is very difficult to mix well enough to get an accurate reading.

btw, 4days is way too soon to rack a beer and wheats don't generally use a secondary.
 
I know wheats are suppose to be cloudy, but I wanted to clean it up a bit by transferring to secondary. Color is perfect at the moment and smells great with the dry hopping. Will bottle tonight since the readings have stayed consistent the past few days. Will probably let sit in bottle for 10 days. Will update when the first bottle cracks open. Thanks for the input
