I got a good deal on these so I bought them in bulk. They came in a sealed plastic bag, but then I realized once I opened them, they would just absorb and "fill up" on oxygen in the air. Is this incorrect? I'm fine with having regular caps, my brew gets consumed quickly enough, but I was just curious if I was missing something.

nah, KB is right...no worries, unless they were packaged in an oxygen-free environment (which they weren't), they'd have already been "filled". They need to be activated first.

Yup.
The trick is DRY storage....well dry and clean. they will be fine....as the plastic that they are packaged in is NOT an Oxygen barrier.
