I've been brewing beer for a while now and just delved into AG recently. But I've never brewed a batch of mead before. I've pretty much got the procedure down I think, but I'm having a hard time finding a good recipe. I ordered about 20 pounds of star thistle honey from a friend of mine who runs a honey farm in NorCal, but I'm afraid to use it with just any recipe (I don't know anything about different honey styles and what they impart to different types of mead).

Really, I just want to make a simple but good mead that is straightfoward and not really anything extra like fruit. I would be open to spices though. Definitely sweet, but still pretty "Hot", like at least 12%.

Also, I plan on doing a 5 gallon batch, which has made the recipe hunt difficult.

Any suggestions?
