Doubling Recipes?

Just curious, when you move from a 5 gallon batch to a 10 gallon batch, do you double all of the ingredients (grain, water, hops and yeast)?

Or would one yeast pack still be enough to get the brew going?
 
One yeast pack of the right yeast is usually enough if you hydrate it first.

Safeale-05 and Nottingham are super strong. Safe-Ale '04 on the other hand has given me fits and stressed in the past.
