Does using gelatin as a fining agent delay carbonation while bottle conditioning?
 
In my experience, Irish moss or whirlfloc gets you 3/4 of the way to clear beer and gelatin can get you to brilliantly clear. I also have experience some yeasty flavors in not gelatin beer, but none after using the gelatin. Chill haze is my most common problem, so I cold crash to 32F and then rack to a keg or secondary with gelatin. Keep it cold and then rack for kegging or bottling.
