Ok on my first batch I head some with head some without on my new batch I think I made the same mistake and just realized why. Am I supposed to put the "gunk" on the bottom of my fermenter into the bottles? Or do I leave that out? This sounds like it is a dumb question I just want to see what the right way is

Leave the gunk out. It won't hurt anything, per se, but who wants extra gunk in the bottle?

For the record, ALL bottle carbonted beer will have a little yeast residue.

I haven't bottled any of it and Im guessing its the yeast that has settled at the bottom. I was told that yeast was needed to carbonate the beer in the bottles so I wasn't sure if I was doing it wrong not not
