Hi all. I am making a nice cider today.

28 Liters of apple cider from a local apple farm.
a little tub of honey from a local honey farm.
Store bought brown sugar. ( no sugar farm local :p )
Malt extract and some cooper yeast.

Any opinion or advice before i start? Like is there anything I am missing or should I go for it and see what happens? :p

I have been making beer for over a year but this will be my first cider.

I made cider a while ago using very similar ingredients. Make sure you measure the OG before adding any of the sugars! I added too much sugar and my cider is now around 9.5%.

Don't get me wrong...it's still an awesome drink (especially due to the high alcohol content!). However I think that that may be approaching the alcohol tolerance of the Coopers yeast. It took about 3 months to carb up in the bottle for me! (assuming you're going to carb that is).
 
ha ha ha good lord.. thx for the heads up. I forgot that apple cider is already dripping with sugar in it :p

well here is to hoping that i didnt put to much in :p

I did however only use about 1/3rd of that malt pack up there.

Oh. i am also making 30 L of cider ( 9ish Gallons? ) in this batch
