The taste of the beer , but also the strength of the beer. I've only used brewing sugar.
 
malt extract. if you throw a bunch of sugar in your beer it'll get a thin and cidery flavor. you can bottle condition with sugar and thin out a really high gravity beer with sugar but other than that stick to malt extract
 
Yeah has been coming out bait cidery. Will give that a go next time.

Yeah yesterday I added more sugar to the beer to make it stronger. It had a mini explosion. Won't be doing that again!
 
This question might be better in the beginners forum, rather than here in automated brewing. I'd expect you'd get more and probably better responses.
