Hello all, so heres what I did:

2.5 Gallons of apple juice, no preservatives

1kg Cooper's Brew Enhancer

Coopers Dark Ale Yeast

Been Fermenting for a week at 78f

It stopped bubbling, consider bottling, is this okay
 
A week is pretty fast for full fermentation to finish.

There are many of factors to consider for fermentation time and, like it was said, a hydrometer is really the only way to know when fermentation has finished.

They aren't more than $10 and if you are going to brew at all are a necessity for accuracy and safety.
 
I would leave a cider for at least 2 - 3 weeks before it has completely finished. I agree with everyone else, a hydrometer is the most accurate way of assessing fermentation.
