Only my second batch and maybe I am reaching here but I just racked my Peach Imperial IPA into the secondary. Been in there a few days and just tasted.....tastes like a great IIPA, but no hint of peach. I added 4oz of Peach Extract.....and nothing.

1lb Melanoidin
I used 7lbs of Muntons Light LME
1lb Light Brown Sugar
2oz Perle at 60mins
.5 oz Sterling at 30
.5 Sterling at 15
1tsp Irish Moss

Using WLP005 (British Ale Yeast)
Was in primary for 8 days....poured 4oz of peach extract into secondary and racked on top.

What can I do to get some peach flavor into it....or am I reaching too far here?

Thanks for the help.

Jim

My first (and smartass) comment is that it's probably a good thing that you can't taste the peach. :D :D

My helpful advice would be to get some extract and put it in at bottling/kegging to get the flavor that you're looking for. :D Even though you added 4 oz already, I can see the peach getting masked by the malt/hops in an IIPA.

It would be helpful if you posted your recipe.
